We Tasted all of the barrels yesterday, such hard work! Christophe is experimenting with Oak barrels this year. I have always been wary of too much wood but I must admit it can add an amazing new layer to a wine. If done properly the oak manages to complete the natural fruit flavors rather than mask or hide them. It's exciting to be adding this new step to our wines. I am looking forward to tasting the progression this spring, as for now I am pleasantly surprised and very impressed. (I love Christophe in the Cave, making wine seams to be his perfect language)
